Loris graduated in 2024 from AgroParisTech's master's programme in ‘economics in the environment, energy sector and logistics’, with a speciality in ‘sustainable food’. He did his end-of-study research placement with INRAE's UMR SADAPT, analysing the obstacles and levers to the development of more sustainable supplies for public school catering.

Loris graduated in 2024 from AgroParisTech's master's programme in ‘economics in the environment, energy sector and logistics’, with a speciality in ‘sustainable food’. He did his end-of-study research placement with INRAE's UMR SADAPT, analysing the obstacles and levers to the development of more sustainable supplies for public school catering.

 He joined the µcosmos project as a PhD student. His thesis aims at analysing the environmental and socio-economic impacts of different ways of recycling unsold bread from craft bakeries. The case of Rennes Métropole will be used to develop a new ‘contextualised’ Life Cycle Assessment method, which will need to take account of the specific features and issues associated with local players and recycling channels. 
Loris was particularly interested in the trans-disciplinary approach of the µcosmos project, which is part of a comprehensive sustainability approach integrating the environmental, economic and social impacts and challenges of processes aimed at reducing food waste.
