Enora joins microcosmos!

Enora was particularly attracted by this multi-disciplinary project with a practical significance that aims at studying the concept of the circular economy on a small scale, based on the recycling of surplus bread; it was an opportunity not to be missed!

Graduated of the Rennes Master of Science's in Nutrition and Food Science for Food Innovation, Enora did two research interships at ONIRIS, Nantes, which gave her an insight into the world of research, its issues and challenges. The first one, exploring the functionalities of ingredients obtained by dry fractionation, helped to steer her career towards research. Her desire to do a thesis was confirmed during her second internship on powder storage.

She joined the reserach unit IATE in Montpellier as a PhD student with the aim of generating a variety of functional powders from stale bread using dry fractionation technologies. This involves studying and understanding the fragmentation and classification processes, as well as studying the techno-functional properties of the powders generated.
