About the project

Micro-COSMOS is a collaborative research project, funded by the Agence Nationale de la Recherche (ANR 2024-2028), which focuses on the recycling* of surplus bread on a small scale in an urban and peri-urban environment.

microCOSMOS participates in the European Workshop for Young Cereal Scientists and Technologists, organised by the “Cereal and Europe” section of the “Cereal and Grains” Association.

The workshop takes place every year and was held from 26 to 28 May in Montpellier (co-organised by the joint research unit “IATE”).

LEMPA is the French laboratory for baking tests, located in Rouen. The aim of these two days ? to better understand how the flour partially substituted with bread powder influences the breadmaking process and the qualities of the finished product.

Loris graduated in 2024 from AgroParisTech's master's programme in ‘economics in the environment, energy sector and logistics’, with a speciality in ‘sustainable food’. He did his end-of-study research placement with INRAE's UMR SADAPT, analysing the obstacles and levers to the development of more sustainable supplies for public school catering.

Clara has always been interested in the circular economy and food issues. This microCOSMOS research project combining the two and developing a multidisciplinary approach is therefore of particular interest to her.
